Chef Victoria Pessolano grew up in the kitchen alongside her mother, sparking an early passion for cooking. She began vocational culinary training at just 13 years old and went on to attend the Culinary Institute of America in Hyde Park, New York, where she earned her BPS with a concentration in farm-to-table cuisine. After graduating, she worked in high-end kitchens throughout New Jersey and New York City before becoming both an Executive Chef and General Manager at the age of 22. Her culinary journey has been enriched by extensive travel, including two weeks in Spain focused on food and wine, six months in St. Helena, California studying farm-to-table practices, and three months in Southeast Asia—Thailand, Cambodia, and Vietnam—immersing herself in local food, culture, and culinary education. Originally from Jersey City, New Jersey, she relocated to South Carolina in August 2023.
