Leading the culinary team at Montage Palmetto Bluff since 2024, executive sous chef Jay Walsh brings more than a decade of culinary experience to the Lowcountry resort’s 72,000 sq. ft. of private indoor and outdoor event space and our 7 different food and beverage outlets. Walsh’s responsibilities include overseeing all culinary operations for the catering and conference services across the expansive resort, as well as developing the skills of the team’s culinary associates to ensure great service as well as their future growth in the industry.

Walsh began working at Montage Palmetto Bluff in 2010, having joined as chef de partie of the resort’s signature dining experience, River House. The role saw him designing menus and nightly tastings, shaping culinary philosophy and standards training, and occasionally managing daily operations. In 2012, Walsh was named chef de cuisine of Buffalo’s, the resort’s casual, three-meal dining establishment, with oversight, training and development of a 12-member culinary team. Two years later, his role expanded again with his promotion to tourant chef/production chef, leading the daily production assistance for all resort restaurants, while also assisting chefs with day-to-day operations.

Walsh helmed from Trinity Restaurant, a fine dining destination on Hilton Head Island, S.C., where as chef and owner, he oversaw the entire operation and its 18-member staff. He was also chef de cuisine with similar responsibilities at Giovanni’s Italian Restaurant on Hilton Head Island.

Born and raised in Camden, NJ and raised in Philadelphia, PA, he developed a deep love for the Philadelphia Eagles. Walsh earned an associate’s degree from the Pennsylvania Institute of Culinary Arts in Pittsburgh. Now calling South Carolina home, he resides with his wife Andrea, their two children, Eliska, William and their beloved canine companions, Olive the goldendoodle and Stormi the sheepadoodle in Bluffton. In his downtime, Walsh enjoys skiing and snowboarding in the Alps, fishing and watersports, golfing, and watching his children compete at sports.
