With a culinary journey spanning more than two decades, Shawn Haynes leads and mentors his team with a focus on excellence and hospitality. “I find fulfillment in building strong kitchen teams, where we support each other like family through the daily challenges and triumphs of our craft,” says Shawn. “By fostering a positive kitchen culture and a spirit of camaraderie, we can deliver exceptional guest experiences.”

Born in Phoenix, AZ, and raised in Los Angeles, CA, Shawn spent summers on his family’s farm in Ohio, which provided him with a unique blend of city/country life experience. His grandfather, a dedicated farmer, and Korean War veteran, served as a considerable influence, teaching him resilience, optimism, and the value of doing things right the first time.

After graduating school, Shawn’s work took him to cities like Las Vegas, San Diego, Boston, and Phoenix before he landed in Greenville, SC. Along the way, he worked beside many talented chefs, especially Jason Knibb at Nine-Ten in La Jolla, CA, who Shawn says, “refined my understanding of attention to detail and presence in the kitchen.” Shawn also earned back-to-back Best Bite at The Mission Valley Craft Beer & Food Festival and placements in live cooking competitions.

Shawn believes that food is the universal language of connection. “My passion is rooted in the power of a meal to bring people together regardless of background, beliefs, or culture. Sharing food creates experiences that stay with us, and I find purpose in making those moments meaningful through careful preparation. One of the greatest gifts we can offer each other is the ability to truly share an experience – and there is no better place for that than gathered around a table.”

When he is not at Jones Oyster Co., Shawn spends his free time with his wife, Rachel and their two kittens. They love exploring new places, dining out and immersing themselves in diverse cultures. He enjoys golf and chess and bringing his best self to everything he does.
